With winter just around the corner, we thought we'd share ‘Mum’s Lasagne’ recipe. It’s a favourite here at the Digital Bakery, and while it’s not the most healthy, it’s made to be enjoyed!
Ingredients:
1 tablespoon of olive oil
1 chopped red onion
1 clove of garlic, crushed
500g of minced beef (ideally angus)
Mushrooms, fried off (optional)
1 500g jar of pasta sauce or make your own
Fresh lasagne sheets (16 of them)
500g ricotta cheese
1/2 cup of milk
250g mozzarella grated cheese
1/2 cup cream
1/4 cup of parmesan
Method
Heat oil in the pan, then throw in your onion and garlic. Give it a good stir until the onion softens. Next, add the mince and cook until it browns. Chuck in the pasta sauce and cook together until it's heated through.
Line a greased (20cm X 30cm) oven dish with a layer of pasta, top it with one third of the meat mixture. Spread one third of the combined ricotta cheese and milk, sprinkle one third of the mozzarella cheese. Repeat the layering finishing with a top layer of pasta. Pour the cream over the top and sprinkle with parmesan cheese.
Bake covered for 30mins at 180 degrees then remove the cover and bake for a further 10 minutes, or until the top is cooked to your liking....
This should serve four easily, so gather some hungry people and enjoy. Bellissimo!
