Mac n’ Cheese Muffins with Bacon

Ingredients:

12 rashers of
bacon

Macaroni (500g)

Breadcrumbs
(100g)

Grated parmesan
(4 tablespoons approx.)

Ingredients
for the sauce:

Butter (150g)

Plain flour (2
tablespoons)

Milk (250 ml)

Grated cheddar
cheese (400g)

Freshly ground
salt and pepper

Method:

Set the oven to 200 degrees and lay your bacon rashers out on a baking tray. When the oven’s hot, cook the bacon for 10 12 minutes (or to your preference of crispiness). Remove and set aside to cool, then dice.

Next, grease a muffin tray with butter and lightly flour. Cook your macaroni until dente, drain and set aside.

Now its time to sort the cheesy sauce! Melt 3 tablespoons of butter in a pan, sift in the flour and give it a good stir with a whisk. Slowly pour in the milk, stirring constantly. Keep stirring until the sauce thickens then add the cheese. Let it melt until the sauce is nice and smooth.

With your sauce done, take the pan off the heat and add the bacon and macaroni. Stir in the reaming butter, breadcrumbs, and grated parmesan. Pour the mixture into the muffin tray and top each one with parmesan and breadcrumbs. Garnish with a little parsley for extra visual appeal if that’s your thing.

Whack your tray of mac’n cheese muffin mix in the oven for 15-20 minutes, or until they’re golden and delicious.
